I've been taking a French desserts class since May 07.This is the first time I've taken a cooking class. In the beginning I was excited to take the class. I am enjoying the class with its comfortable atmosphere and wonderful teacher.The class is a demonstration class. While the teacher is showing us how to make various kinds of sweets, I take notes. In the end we eat the food with good coffee.At my first lesson, I learned how to make a Dacquoise, which is a traditional French sweet. It's made by mixing almond flour and meringue and then baking for 17min.The out side is crispy and inside is moist. Teacher sandwiched caramel cream between two Dacquoise. The hardest part is folding the meringue into almond flour!When I got home I tried to make a Dacquoise. The meringue looked good!However I had trouble folding the meringue into almond flour. In the past, I was never successful folding meringue.Anyways I put it in the oven to bake. It looked and tasted good but It was a little sticky and not as airy.
