庭の柿でジャムを作った。
この日記に何度も書いているが、この時期、毎朝夕の落ち柿の始末が大変だ。鳥が啄んで半分になったところで落ちる柿も二つや三つではない。始末しないでおくと我家の小庭は、まるで大酒飲みの酔っぱらいの臭いになってしまう。穫り入れすれば済む事だけれど、そして甘い柿なので穫り入れしたいのは山々だが、みな高い枝に生っている。数えるさへ面倒なほど、おそらく三百個は優にあるだろう。
風の吹きようで両隣の家の敷地に落下するので、顔を合せるたびに謝っている。それで昨日、高枝伐り鋏がとどく限り、しかも少しばかりだったが、切り落した。もちろん落下するや柿は割れて散った。しかし落ちても割れなかった柿も30個ばかりあった。仰向いて作業をつづけて、足許がふらついてきたので止めたが、じつはその30個ばかりの柿でジャムを作ったのだ。
40分ほどで出来上がった。ペクチンを抽出するために、やはり庭の土佐文旦を刻んで入れた。レモンの代用である。甘さは控えめの、添加物なしの純正柿ジャムである。ありあわせの広口瓶を煮沸消毒して詰めた。詰めた後、蓋側を下にひっくり返して置く。こうすることで日持ちが良くなるのである。

shears arrived, and only a little, I cut them off. Of
course, as soon as it fell, the persimmons broke
and scattered. However, there were about 30
persimmons that did not break even if they fell.
I turned my face upward and continued to work,
and I stopped because my feet were swaying, but
today, I made jam with its about 30 persimmons.
It was completed in about 40minutes. In order
to extract pectin, I also chopped Tosa Pomelo in
my garden. It is a substitute for lemon. It is a
genuine persimmon jam with a modest sweet-
ness and no additives.
The existing wide-mouthed bottle was steriliz-
ed by boiling and packed. After packing, turn the
lid side down and place it. This will improve the
shelf life.
